Greens & Beans Lasagna Bake

A rich, comforting twist on the classic — powered by Greens & Beans 7 Veggie with Lentils Sauce.
This recipe takes the traditional lasagna to the next level with layers of savoury lentils and vegetables. The beauty? You can easily swap in any Greens & Beans sauce for a personalized gourmet take. It’s one of my go-to comfort meals — hearty, flavourful, and perfect for make-ahead meal planning.
Ingredients
- Lasagna sheets (fresh or dried)
- 1 tub (475g) extra-smooth ricotta cheese
- 1 cup grated Parmesan cheese
- 1 large egg
- 1/2 cup chopped fresh basil
- 1 clove garlic, minced
- 1/4 tsp each salt and pepper
- 4 1/2 cups shredded mozzarella cheese
- 675g ground lean beef
- 1 pouch (700 ml) Greens & Beans 7 Veggie with Lentils Sauce
Instructions
Prepare the pasta: Cook lasagna sheets in a large pot of salted boiling water, 2 minutes less than package directions for al dente. Drain and lay flat in a single layer on a clean tea towel to prevent sticking.
Make the meat sauce: In a skillet over medium heat, brown the ground beef. Add the Greens & Beans 7 Veggie with Lentils Sauce and stir to combine. Set aside 1 1/2 cups of this sauce for topping.
Prepare the ricotta mixture: In a bowl, mix ricotta, Parmesan, egg, basil, garlic, salt, and pepper until smooth.
Assemble the lasagna: In a 13x9 inch (3 L) baking dish, layer as follows:
- Spread one-third of the meat sauce on the bottom.
- Add 3 lasagna sheets.
- Sprinkle with 1 1/2 cups mozzarella.
- Add half of the remaining meat sauce.
- Layer 3 more lasagna sheets, followed by all of the ricotta mixture.
- Add another 3 lasagna sheets, the remaining meat sauce, and 3 final sheets.
- Top with the reserved sauce and the remaining mozzarella.
Make ahead (optional): Cover tightly with plastic wrap and refrigerate for up to 3 days. Remove wrap before baking.
Bake: Cover with foil and bake at 375°F (190°C) for 45 minutes. Remove foil and bake an additional 15 minutes, until cheese is golden and bubbly.
Rest & serve: Loosely cover with foil and let rest for 30 minutes before slicing. Serve warm and enjoy!
