Chickpea Comfort Curry

A weeknight favourite that tastes like a weekend indulgence. This creamy, comforting Chickpea Curry comes together in one pot using our 7 Veggie with Squash Masala Sauce, coconut milk, and a handful of fresh greens. Packed with flavour, plant-powered goodness, and cozy spices — it’s a dish you’ll come back to again and again.

Ingredients

  • 1 pouch Greens & Beans 7 Veggie with Squash Masala Sauce
  • 1 can (540 ml) chickpeas, drained and rinsed
  • 1/2 cup coconut milk (or more for desired creaminess)
  • 2 cups finely sliced Swiss chard or kale (center ribs removed)
  • Juice of 1/2 lime
  • 1/4 cup chopped fresh cilantro
  • Optional: chopped fresh mint, to taste
  • Salt, to taste

Instructions

  1. In a large sauté pan or saucepan, bring the 7 Veggie with Squash Masala Sauce to a gentle simmer over medium heat.
  2. Stir in the chickpeas and coconut milk. Mix well to combine.
  3. Cover and simmer for 15–20 minutes, stirring occasionally to allow flavours to deepen.
  4. Meanwhile, rinse and prepare your greens, cilantro, and mint. Remove the ribs from the greens and slice into thin ribbons.
  5. After the sauce has simmered, add the greens and cook uncovered for 4–5 minutes, until wilted and tender.
  6. Remove from heat. Stir in lime juice, chopped cilantro, and mint if using. Taste and season with salt as needed.
  7. Let rest for 5–10 minutes before serving.

Serving Tip: Enjoy with warm rice, naan, or flatbread for a nourishing, feel-good meal.
