Chickpea Comfort Curry

A weeknight favourite that tastes like a weekend indulgence. This creamy, comforting Chickpea Curry comes together in one pot using our 7 Veggie with Squash Masala Sauce, coconut milk, and a handful of fresh greens. Packed with flavour, plant-powered goodness, and cozy spices — it’s a dish you’ll come back to again and again.
Ingredients
- 1 pouch Greens & Beans 7 Veggie with Squash Masala Sauce
- 1 can (540 ml) chickpeas, drained and rinsed
- 1/2 cup coconut milk (or more for desired creaminess)
- 2 cups finely sliced Swiss chard or kale (center ribs removed)
- Juice of 1/2 lime
- 1/4 cup chopped fresh cilantro
- Optional: chopped fresh mint, to taste
- Salt, to taste
Instructions
- In a large sauté pan or saucepan, bring the 7 Veggie with Squash Masala Sauce to a gentle simmer over medium heat.
- Stir in the chickpeas and coconut milk. Mix well to combine.
- Cover and simmer for 15–20 minutes, stirring occasionally to allow flavours to deepen.
- Meanwhile, rinse and prepare your greens, cilantro, and mint. Remove the ribs from the greens and slice into thin ribbons.
- After the sauce has simmered, add the greens and cook uncovered for 4–5 minutes, until wilted and tender.
- Remove from heat. Stir in lime juice, chopped cilantro, and mint if using. Taste and season with salt as needed.
- Let rest for 5–10 minutes before serving.
Serving Tip: Enjoy with warm rice, naan, or flatbread for a nourishing, feel-good meal.
